RECIPE PREPARATION Grilled peaches:

The dough is prepared as in the Parisian recipe with cherry fondant.

Put half a peach on a circle of dough about 0.3 cm thick, grease with the mixture of yolk and milk, place the grill and grease it.

Strawberry cream
Wash the strawberries and let them drain. After the strawberries have drained, put them in a bowl and pass them with the blender until you get a puree. Over the strawberry puree add the caster sugar and mascarpone cheese and mix.

Put a sachet of gelatin dissolved in 150ml of water on a steam bath, after it has dissolved add gelatin over the strawberry puree, mix until smooth, then leave to cool.

Beat the whipped cream powder with the milk until it becomes hard and add the whipped cream obtained over the strawberry puree with mascarpone, stirring until we obtain a homogeneous cream.

After we have prepared both creams, we prepare 6 cups or bowls. We crush in each cup a little of the cake top, we put over the peach cream then the strawberry cream and we decorate with a slice of kiwi, a strawberry and a piece of wafa, or something else according to preferences.
Refrigerate for at least an hour and then serve cold. It is a wonderful and cool dessert.

Different from this jam, compared to others I've made so far, is the method of preparation and the fact that I did not clean the peaches. The method is taken here: Casa Da Benedetta. The original recipe also contains ginger, which I don't really like, so I gave up. The lady in the pictures makes a larger amount of marmalade, and the peaches she uses are greener and have redder skin, hence that beautiful color. My peaches were soft, with partially reddish and yellow skin, so the jam has a different color, but still beautiful, I say.
Due to the skin and the preparation method that requires little processing time, the jam is much more fragrant, fragrant, colorful. So the method convinced me and I will take it over with apricot jam.
The shorter the processing time, the more beautiful the color, the tastier the jam, and the nutritional properties are better preserved :)

I did not use all the peaches in the picture (2 kg), but only 1 kg.

The time is approximate, as the cream may require more or less time, depending on how cold it is. We try to do it for 40 seconds and, if you need more time, we beat it a little more, but without going overboard. When he is whipped, we take him out of the glass and set him aside.

In the same unclean glass, add the 400 g of cream cheese, the 175 g of sugar and the gelatin from the pan that I put aside. We mix it over time 20 seconds at speed 3.5. Add the cream and stir for 5 seconds at speed 3.5.

We will throw it on top of the cake we finished and we will keep it in the fridge for about 2 hours, until it leaves.

For coating: put in a glass of cold water to soften the 4 sheets of neutral gelatin. In a small saucepan, add the 50 ml of peach syrup and heat it until it starts to boil. Take the gelatins when they are already hydrated, drain them well and throw them in the syrup. Mix well so that it falls apart. Set aside to cool.

In our clean glass we add 575 g of peaches in syrup, the teaspoon of vanilla extract and crush it during 30 seconds at speed 5. Pour the gelatin over the crushed peach and mix for 5 seconds at speed 5. Pour over the cake when the cream cheese is coagulated. We put it in the fridge for another 2 hours.
